How the Prague cake appeared at MuffinTaffin

In November the coast still calls for chocolate. At MuffinTaffin in Budva, the Prague cake sits among the cakes guests add when they place orders.

From a Moscow restaurant to a chocolate cake

The dessert did not appear in the Czech capital. Pastry chef Vladimir Guralnik is credited with creating it at Moscow's Praga restaurant and naming the cake after the dining room, not the city.

The method is direct. Chocolate sponge is layered with chocolate cream, a thin spread of apricot jam goes on, and a chocolate glaze seals the top. The jam keeps the glaze from soaking the crumb.

MuffinTaffin bakes that same build for sales in Budva. A whole cake can go into orders for a celebration, and one dense slice is enough on a cool day.

Montenegro in November is past the summer heat. In a cooler kitchen the glaze sets evenly, so this chocolate cake fits the season better than a light fruit dessert.
