MuffinTaffin and the Prague cake's Moscow origin
The Prague cake did not come from the Czech capital. In the early 1970s, confectioners at the Prague restaurant in Moscow, led by Vladimir Guralnik, built a chocolate torte and named it after the restaurant.
The method is still easy to recognize. Bakers stack chocolate sponge with chocolate cream, brush the top with apricot jam so the glaze stays even, and finish it with a thin coat of dark chocolate.
A November slice in Budva
On cool November afternoons, MuffinTaffin cuts the Prague cake for a cup of tea instead of keeping it only for a large celebration. In a cooler kitchen the glaze sets cleanly, and the jam keeps the top from turning dull.
In Budva, orders for cakes are part of everyday sales, and this torte can leave the counter whole for a family table.
Montenegro's early November is still mild by the sea, but evenings turn damp, so a dense chocolate cake fits that hour better than a light summer tart. The bakery keeps the same layers: sponge, cream, jam, and glaze.
