Napoleon cake at MuffinTaffin for Budva orders
November in Budva is cool enough for a cake that needs a quiet night in the fridge. At MuffinTaffin, Napoleon is one of the cakes we put into sales and orders, not a story we only tell.
The method is old and plain. Thin sheets of puff pastry bake until they are dry and golden. Pastry cream goes between the layers while they are still warm, then the cake rests so the sheets drink in the cream without turning soggy.
How the slices leave the kitchen
For orders we cut even pieces after that rest, or leave a whole cake for a family table. In damp evenings the flaky edge holds better than a soft sponge.
The crumbs on top are not a jar topping. We crush a spare baked sheet and scatter it over the cream so each slice shows the same layers.
If you want other cakes from the counter as well, say so when you place orders. Budva and the rest of Montenegro take portions from the week’s sales.
